To Say the Least...

Good morning!

Sorry about not posting as much as I should! I haven't been able to catch up mentally or physically since before last week!

Anyways...some updates...

Remember me telling you I was going to start teaching kickboxing at my gym? Don't worry...it's still happening! I've been training and training (getting a little better, but still nervous to speak into a mic). There are two (night) kickboxing classes at two of my gyms different locations during the week. A Monday (at North) and Thursday (at South). I am planning to take over the Thursday night class. A couple of training sessions ago, I wanted to clear up with my "trainer" that I was just teaching Thursday or if they expected me to teach Monday too...I wouldn't have minded either answer. She said no, not Monday's, because they were going to try to make it into a choreographed kickboxing class...sort of like a turbo dance kickboxing class...don't ask. 

Anyways...I had another session a couple nights ago and my trainer brought up that the Monday night plan had fallen through and asked if I wanted to teach Monday's as well! I was a little hesitant at first...being very careful as to how I answered. I mean...I wanted to teach both, yes. But starting off teaching two classes?! Talk about nerve city! 

So, basically, I said yes. I start teaching/co-teaching these classes after the 4th. AHHHH!

Back to the top...I have not caught up on anything yet. Touché to people that travel a lot for work...I was gone a whopping 3 1/2 days plus a wedding weekend and feel like I have been hit by a train. Perhaps ones body would just get used to it. But being out of sync with my schedule (work, work out, sleep) has done a real number on me. 

I shouldn't complain, I knowwww! I am very thankful for all the opportunities I have been given so far this summer. And they seem to still be piling up!

Through all this stuff...all I can think about is my poor cat. All she wants to do is sleep, play, and hang out with me. I talk about her like she's my child...well she is...but anyways... :)

I learned a lot the last couple of weeks...especially in Philly. I have always been one for history and really enjoyed the time I got to learn about the city. 

I'm hoping that my crazy life and schedule is slowing down. I enjoyed everything, but I missed my bed and most definitely the Beebs!

Quick Catch Up—Up, Up & AWAY!

Ahhhh!!! It's Monday!
This weekend went EXTREMELY fast!

Post-5k results! Stef & I tied for 1st in our age group (20–29)...we were really pleased with our time and I'd say it was well deserved...esp. since we both felt "crampy" at the half way point!


Overall, it was a really good weekend. I LOVED seeing my classmates—especially the ones I rarely see and those that have families and careers now. 

I spent yesterday with my papa (John). We, of course, grilled and hung out and watched TV. He really is a great dad...along with my stepdad, Mike. I'm pretty lucky to have 2 (amazing) sets of parents! 

 Now I'm leaving for my plane to Philly...stay tuned! I will try to post as much as possible!

The Time Has Come the Walrus said...

I will be indisposed as of tonight around 5pm! To an eventful weekend! Running around, doing errands, packing, planning, reuniting, dancing, singing, celebrating...yada yadaaaaa!!! I'm so excited it's unreal! (Yes, I know...only my 5 year...but this has been a long 5 years!)

Sunny Summer Cravings!


I'm craving lake time right now...especially since the sun has been out the last couple of days!

Boy, do I have some treats for you today! Here are some summer (lake time) favorite recipes of mine! 

Gin Buckets!
1 3⁄4 liters gin
2 liters Sprite
1 (12 oz.) can frozen lemonade concentrate
1 (12 oz.) can frozen limeade concentrate
2 lemons (sliced)
3 limes (sliced)
Slice an orange for a little mixture (if you'd like)
Ice (of course)
Directions: 
1. Slice lemons and limes...in rounds.
2. Mix all ingredients together in a bucket (some people put them in coolers...clean coolers of course!)
3. ALlow to sit/chill for 20 minutes before serving
4. Enjoy!

Cucumber Sub
These are the ingredients I chose to use in my cucumber subs. These are the items I prefer on a sandwich.  Guess what? you don’t have to follow my recipe.  Make something you will enjoy! I happen to be a HUGE fan of both dijon mustard and laughing cow cheese.
Cut your cucumber to make it appropriate for a sub sandwich and scoop out the seeds. The sandwich fillings will go there!

Greek Pasta Salad
1 small package tri-coloured pasta spirals (about 3 cups dry)

1 small container (about a cup) solid feta cheese (or crumbles, if you prefer)
1 small container (about a cup) whole Kalamata olives (or sliced & pitted if you prefer)
1 package grape tomatoes
1 cucumber, sliced
1 green or red bell pepper, chopped

Dressing:
1/2 cup olive oil
1/8 cup red wine vinegar
1/8 cup lemon juice
1/4 cup chopped fresh parsley or 2 Tbsp. dried
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. oregano
1/8 tsp. garlic powder

Cook pasta according to package directions. Drain & rinse in cool water. Set aside to cool completely.

In a large salad bowl, combine the cheese, olives, tomatoes, cucumber, & bell pepper.

Mix together all dressing ingredients

Association

It's funny how if we see something once and remember it, we associate it with a certain word or meaning when it comes up again. Well...here's something I bumped into today, while on Pinterest, font/type searching.

"Hill House" is a font I associated with one of my favorite shows...American Horror Story. The show uses it in their opening and closing credits. This show is veryyyy creepy...so I have always thought of this font as eerie or uneasy.

And now I see it with a bunch of cute, light colored fonts...as if it's supposed to be attractive or welcoming...uhhhh no.

PS—I got my body scan done over lunch. Of course the weight isn't down as much as I wanted...which is obvious that it's turning into muscle and no longer fat. 

I have lost 4/.5" around my middle, 2" on my upper chest, and smaller numbers on my thighs and arms in the last month! 4" is unreal! I was sort of bummed when I saw the scale hadn't moved much and my body fat hadn't gone down significantly...but the inches are gone. That's a bigger deal than what the scale says! At least I'm headed in the right direction. HOLLA! I deserve a beer or two this weekend for that! You too—have a few for me! :)

5 Years?!

I am one week and 3 days out, from my 5 year class reunion.

Only 5 years, you say? It's felt a lot longer than that, BUT I am very excited to see everyone. 

Here are a couple throwbacks (yes, I know it's Wednesday and not Thursday—"TBT" throwback Thursday, for those of you who are unaware.) More photos to come, next week, before the weekend!

the end w/the other senior cheerleader.) One of the best memories of high school...we were all so happy! We even had a bonfire at the football field the next night to celebrate (no alchy allowed, of course).

My classmates and teammates on drill team. We were always there for each other and most definitely stuck together. I miss them so much!
