Sunny Summer Cravings!


I'm craving lake time right now...especially since the sun has been out the last couple of days!

Boy, do I have some treats for you today! Here are some summer (lake time) favorite recipes of mine! 

Gin Buckets!
1 3⁄4 liters gin
2 liters Sprite
1 (12 oz.) can frozen lemonade concentrate
1 (12 oz.) can frozen limeade concentrate
2 lemons (sliced)
3 limes (sliced)
Slice an orange for a little mixture (if you'd like)
Ice (of course)
Directions: 
1. Slice lemons and limes...in rounds.
2. Mix all ingredients together in a bucket (some people put them in coolers...clean coolers of course!)
3. ALlow to sit/chill for 20 minutes before serving
4. Enjoy!

Cucumber Sub
These are the ingredients I chose to use in my cucumber subs. These are the items I prefer on a sandwich.  Guess what? you don’t have to follow my recipe.  Make something you will enjoy! I happen to be a HUGE fan of both dijon mustard and laughing cow cheese.
Cut your cucumber to make it appropriate for a sub sandwich and scoop out the seeds. The sandwich fillings will go there!

Greek Pasta Salad
1 small package tri-coloured pasta spirals (about 3 cups dry)

1 small container (about a cup) solid feta cheese (or crumbles, if you prefer)
1 small container (about a cup) whole Kalamata olives (or sliced & pitted if you prefer)
1 package grape tomatoes
1 cucumber, sliced
1 green or red bell pepper, chopped

Dressing:
1/2 cup olive oil
1/8 cup red wine vinegar
1/8 cup lemon juice
1/4 cup chopped fresh parsley or 2 Tbsp. dried
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. oregano
1/8 tsp. garlic powder

Cook pasta according to package directions. Drain & rinse in cool water. Set aside to cool completely.

In a large salad bowl, combine the cheese, olives, tomatoes, cucumber, & bell pepper.

Mix together all dressing ingredients

I'm thinking these are pretty self explanatory...who doesn't love s'mores in the Summer?!
